Fully mature agaves are slow-cooked in traditional masonry ovens before being gently crushed by a large volcanic stone wheel (tahona), a method that preserves the rich fibers and natural sweetness of the agave. The agave juice and fibers are then fermented together for 6–7 days in open-air, wood-lined vats using wild ambient yeast native to the region. This traditional fermentation approach enhances complexity, earthy depth, and aromatic intensity. The spirit is then double-distilled in small copper pot stills and bottled unaged to preserve its pure agave expression.
The nose opens with vibrant aromas of cooked agave, fresh citrus peel, white pepper, green herbs, and subtle floral and mineral notes. On the palate, it delivers a rich yet elegant profile of roasted agave, lime zest, lemongrass, green apple, black pepper, and earthy minerality, supported by a soft, oily texture from the tahona process. D. If the package is returned due to failed delivery, a twenty-five percent (25%) restocking fee will be deducted from your refund. Shipping costs will not be refunded.
E. If the package is returned to The Booze Cartel damaged because of failed delivery attempts or refusal of delivery, you are responsible for the full cost of the order.
